Dr. Steven Gundry: A Renowned Heart Surgeon’s Transformation into a Nutritionist

Dr. Steven Gundry is a well-known American doctor and former cardiothoracic surgeon. He is widely recognized for his innovative contributions to the field of heart surgery, including being one of the first surgeons to test the implantable left ventricular assist device and for pioneering the use of robots in minimally-invasive heart surgery. Additionally, he holds patents on numerous medical devices, such as the Gundry Retrograde Cardioplegia Cannula, the Skoosh Venous Cannula, and the Gundry Lateral Tunnel.

Despite his success in the field of heart surgery, Dr. Gundry eventually shifted his focus to nutrition, hoping to help people improve their health and avoid surgery. He founded the International Heart & Lung Institute as well as the Center for Restorative Medicine in Palm Springs and Santa Barbara, California, where he helps patients take control of their weight, health, and energy through simple diet advice.

Dr. Gundry’s journey to becoming a nutritionist began in 2001 when he met a patient with heart disease who made a complete turnaround after making unusual changes in his diet. Dr. Gundry learned what nutrients were deficient in the American diet and which foods were toxic to the human body. In 2002, he founded his own practice at the International Heart & Lung Institute and began treating patients with his new dietary philosophy, which resulted in transformative results. He eventually published his first book on nutrition, “Dr. Gundry’s Diet Evolution,” in 2008.

Dr. Gundry’s work in finding solutions to reversing disease through nutrition continued, resulting in his first “Paradox” series books: “The Plant Paradox” in 2017 and the sequel in 2018, “The Plant Paradox Cookbook.” In these books, he outlines, with statistical data and proven research, the real culprit behind every ailment – from auto-immune disorders to migraines. He has helped tens of thousands of people improve their lives through following the Plant Paradox program.

Dr. Gundry’s unique vision of human nutrition is based on avoiding lectins, a type of protein found in many foods, including grains, beans, and certain vegetables. He believes that lectins cause inflammation in the body, leading to a range of health issues, such as weight gain, joint pain, and even heart disease. Dr. Gundry’s diet plan emphasizes the consumption of vegetables, fruits, healthy fats, and lean protein sources while avoiding lectin-rich foods.

Dr. Gundry’s work in the field of nutrition has made him a well-known figure in the health and wellness community. He continues to promote his unique dietary philosophy and has helped numerous patients improve their health and avoid surgery through simple diet advice. Dr. Gundry’s contribution to the field of nutrition has provided a new perspective on how nutrition impacts our health and how we can make simple changes to improve our overall well-being.
